Fun Monday - Food for Thought

I'm hosting Fun Monday this week, and I wanted to keep it kind of simple. Show me your favorite dish, step by step (with pictures if possible). See? Easy!

Or so I thought... It really helps if other people aren't eating your ingredients before you have a chance to use them.

My dish today is Broccoli Quiche.

I try to make this as easy as possible... pre-made pie crust, grated sharp cheddar cheese, sliced swiss cheese, eggs and broccoli florets. Unfortunately, my husband ate all the swiss cheese, so I had to make a few adjustments. Instead of laying swiss on the bottom of the pie shell (uncooked), I sliced cheddar and laid those out.

Then I trimmed and rinsed the broccoli florets and microwaved them for 5 minutes. I want them only JUST cooked, not mushy!!! And I chopped up some more cheddar and some mozzarella. We like cheesy quiche!

When the broccoli is done, I dump it all into the pie shell and sprinkle the chopped up cheese on top of it, making sure it gets down in between the broccoli pieces as well.

We use eggs, but you can also use a pint carton of egg substitute. I crack 8 eggs, add a good dollop of milk (just until it comes to the surface - it's not a lot), and whatever spice I decided to use that day. Black pepper and salt, garlic sometimes, or thyme or sage... depends on your mood and how it smells to you. Beat it all together and pour it over the top of the broccoli and cheese.

I also like to add a little grated parmesan on top (though I suppose you can mix it in too). Place in a preheated to 350 degree oven and bake for about 30 minutes. It's done when a knife inserted into the center comes out clean, but slightly sweaty. I overcooked mine a bit - our oven is a bit wonky and the temperature was about 25 degrees higher than I thought.

The final product! Even with all the substitutions I made, it came out quite tasty. It filled up the three of us, plus we had two pieces left over for lunch the next day. I'd say this would serve 6.

You can vary your additions. I've added ham, bacon, tried it with spinach... the variations are endless, actually. This version just happens to be our favorite.

Oh Yum! I am totally going to make this one! It looks delicious! I make a similar one using spinach but without the pastrie. The kids love it and its so easy.

Wow, that looks delicious ! but I think you should put a safety lock on your fridge with a combined number for hungry husbands, lol !

I love broccoli and I love quiche. This sounds delish. I had to laugh when you said your hubby ate the swiss cheese. That happens to me all the time. I have to hide my ingredients sometimes to keep it safe from my Hubs. Thanks for sharing and hosting Sayre

This looks really good.

My husband got creative last night and tried to make a cauliflower casserole. It was good - but not spectacular. I told him that broccoli probably would have been better. This one looks like it might be the right one!!!

Your swiss cheese stealing husband reminds me of an old friend who always liked to say that anything good cooked in their house was going out the door to some function--bridge party, church supper, etc. Leaving him with just a block of cheese for his dinner. Total exaggeration on his part but an ongoing family joke.

This is the kind of recipe that you keep coming back to. Does The Boy like it? I like it that you went heavy on the broccoli.

Wow - I'm going to confess that I cannot stand eggs. *runs and hides* I'll eat French Toast, which is cooked in an egg batter, but that's about it for me and eggs. But - the quiche looks like it would make an egg lover drool! Fabulous job! (By the way, I'd have left the Swiss cheese and eaten all the cheddar. *giggle*)
