Fun Monday - Potluck!

Yesterday was our covered dish dinner at the church.  It's been a long time since I attended a function like that and I was stymied for something to bring (hence this topic this week).  My mother, who has turned into an amazing cook had several suggestions:

Paula Deen's Corn Casserole or perhaps the winning recipe from "Mad Hungry,"  Winner Winner Chicken Dinner?

My son voted heavily for the corn casserole, which is one of his favorite dishes - but I was a little concerned that there would be few entree-type dishes.  Typically, an event like this draws lots of vegetable casseroles and desserts but not much in the way of meat or salads.

I thought briefly about making one of my quiches, but I'd just made one for us and even though WE use it as a main dish, it might get lumped in with the vegetable dishes since it's a vegetarian quiche.

Finally, I decided on a  meat lasagna that Julie at Another Chance Ranch posted.  It was quick.  It was easy...  It was a hit!  There was very little left over and ZBoy and I ate the remains for dinner last night!

Church potlucks are great places to find the best recipes. I still cook from a 40 yr. old Methodist cookbook. I'm with ZBoy on the corn casserole vote, but sure Julie's lasagna was a hit as well.

THis is pretty clever. In fact it would be something i'd love to sign up for if I actually HAD any good recipes... you see I'm starting to go VEGAN (loong story - dairy is not good for cancer, bla bla) and so now I'm looking for vegan entrees... it's harder than I thought. I'm scowering the web, but if you know something tried and true than I'll use it for sure - I used to make a great quiche too - but I can no longer even use eggs :(

I can't wait to read all the fun recipes though, sounds like a fun topic!

I will have to try your (and Julie's) recipe some time when my husband is on vacation...he is not a fan of lasagna and/or ravioli. I am not sure how we ended up married, sometimes! Thanks for hosting, Sayre, and this is a great topic for the beginning of potluck season.
