When Life Gives You Lemons...

Actually, it was my dad who gave me lemons...  lots and lots of lemons!!  He's got a couple of meyer lemon trees on the farm and they produce like crazy.  I am the happy recipient.
 

My husband likes to just slice and eat them.  We put them in tea, squeeze over fish...  but there comes a time when you just can't eat any more and begin thinking that they may go bad just sitting around in your kitchen.

 
A trip to the farm was definintely in order!  Dad got himself a lovely juicer last year, so when this year's crop threatened to overwhelm me, I came out to use it.

 
A GALLON of fresh-squeezed lemon juice!!!    Some to be frozen, and some for use right now!
 
Last summer, Dad gave me my very own lemon tree.  It gave us two lemons (one of which got knocked off before it was ready).  We are pleased - they don't usually produce for a couple of years after planting.  Hoping for more this year.

Wow, that's great. My lemon tree didn't produce for 5 years, Bob was ready to take it out. Now, it's a real heavy producer.

Freezing by the gallon is a good idea! My MIL has a lemon tree and we get them by the truckload each year. I freeze them in ice cube trays and then dump them into ziplock bags.
